We’ve still got so many workers coming in and out of the house wrapping projects up, so it’s been a challenge to use the kitchen (we still don’t have our fridge after two months of waiting now 😂). But it was my husband’s birthday yesterday and I was determined to make a dessert like I always do. So in between the working, and the water being turned off for hours I managed to pull this together! It’s a Salted Caramel Carrot Cake with a Cinnamon Pineapple Soak and Cream Cheese Frosting 😊💜🎉. I’m hoping to get back to sharing recipes from a fully functional kitchen soon! 😂

There’s just something about the little pops of colour and crunch in these cookies that screams “Springtime” to me. It might be that the sun is shining and the birds are chirping while I write this, but it definitely feels like Spring has (finally) sprung around here!

These cookies are chewy and buttery with just that little bit of tang and they bake up big and so pretty! The happy accident of my not having enough of one kind of sprinkles to make them results in a delicious textural difference that somehow makes a great cookie even better.

I think these would look perfect in a sweet little box or basket for Easter. Pair them with some Peeps and a cute pastel ribbon and you’re pretty much good to go!

I recently found an icecream recipe inspired by a European tradition of drinking lemon beer with spicy gingerbread cookies and I was totally inspired! ⁣

When I started my holiday baking I thought why not try to take my traditional gingerbread recipe and add some lemon zest, just to see what would happen?⁣

The result was even better than I thought it would be. The flavours meld perfectly and the lemon takes the gingerbread to a whole new level. It’s my New Favourite Gingerbread Cookie recipe for a reason. 😉⁣
