Good morning! Here is the first (ok, the second) snow! This weather is calling for some hearty, soul-warming food, isn't it?! At least one thing this year was good - mushroom harvest. Even if you didn't have a chance to go to a mushroom hunting party, our local produce is a really good sub for it. This recipe is not the familiar Campbell's cream of mushroom. That's right, mushroom soup does not have to be creamy. Even more so, it does not have to be from a can.
Canned soup is certainly convenient, but it tastes so much nicer, incomparably better from a pot, homemade.
This soup was my grandma's favorite in August-September when it is a season for mushrooms in a forest and for the pumpkins on a field. Now, anytime I can get my hands on good fresh mushrooms, I make the soup.
It is quick to cook and pleasure to eat. Full of flavors, light, with a soft under-taste of white wine it could be an appetizer or lunch. Any mushrooms are good for the soup, but preferably wild if you have access. Even better if there are two or three, or four different types.
Almost any vegetable goes together with mushrooms. So, this soup is your chance to clean up your fridge from all those sad single carrots, wilted celery and other leftovers. Stay frugal, shop local, save the planet.
Just add some wine for better taste. :D
And make sure to serve it with croutons or crostinis – the crunchy part is a must.
