Primorska frtalja 🤍🇸🇮
This is a traditional Slovenian herb-filled dish from the Primorska region — rustic, seasonal, and deeply rooted in countryside cooking.
Frtalja was often made in rural homes to feed farmers throughout the day — breakfast, lunch, or dinner — using whatever was fresh from the garden.
Ingredients (Serves 2–3)
• 4 large eggs
• ⅓ cup milk (80 ml)
• 3 tbsp all-purpose flour
• Salt & black pepper
• A generous mix of fresh your favourite herbs in season, finely chopped:
– fennel fronds
– chives
– green onion tops
– mint or lemon balm + lemon zest
– zucchini
– young nettle
– elderflower
• A few slices of pršut (optional but traditional in some homes)
• small handful of shredded cheese
• 1 tbsp butter or olive oil
Step-by-step directions:
1. Wash and finely chop all herbs and vegetables.
2. If using nettles, blanch them quickly in hot water first.
3. Lightly sauté herbs (and pršut if using) in butter until fragrant.
4. In a bowl, whisk eggs with salt and pepper until frothy.
5. Add milk and flour and mix until smooth.
6. Fold in the sautéed herb mixture and shredded cheese.
7. Heat butter or oil in a small pan over medium-low heat. I use an 8” frying pan.
8. Pour in mixture, cover with a lid and cook until golden underneath.
9. Flip carefully, place lid back over the pan and cook the other side until fully set.
10. Slice into large wedges and serve warm with a slice of fresh sourdough 🤍
