Crème Fraiche Vesper
This is one of those martinis that make you raise an eye but wins you over after the first sip.
The vesper is the underdog of martinis, however this one pairs so perfectly with the majority of our menu. The crème fraiche is washed and clarified into the drink which creates a smooth mouthfeel with a subtle citrusy zing. Mustard seed adds subtle depth and herbaceous qualities that compliment the pepper notes of and citrus of Tanqueray 10.

Port City - “the one with the marshmallow”
This is one of our more unexpected cocktails on menu. It reads like it would be a heavier drink with roasted barley and starchy from green banana, but we add an enzyme that’s found when making beer to break it all down and make it soft and delicate.
We specifically use green bananas to get a natural sour and bright flavour note, with manzanilla sherry to help dry it out and add more ‘green’ characteristics.
We finish this punch off with miso banana marshmallows on a banana leaf, because who doesn’t want a little fun with their cocktails?

Olive Brine in an Old Fashioned…? 🤔
You wouldn’t think it, but yes, olive brine does work and should belong in an Old Fashioned. The simplest way of putting it - it seasons the cocktail beautifully. We smoke our castlevatrano olives with applewood which creates more depth of umami and notes that pair well with the whisky, as well as the Kokuto (that’s fancy Japanese black sugar - think malty brown sugar with more alkaline notes)
The garnish is a piece of chocolate that brings all the flavours together, and let’s face it, you deserve something special too.
