Don't forget that the Lodepole Bakery is baking bread on Thursday. You may pre-order bread on our website at https://www.lodgepolemarket.org/lodgepole-bakery-products and it is helpful if you can order before Wednesday morning so we know how much bread to mix. Bread can be picked up at St. Mary's on Thursday between 4:30 and 6:00 pm, 68 Street and 112 Ave.

For the most part, I have been baking sourdough bread with 50% whole wheat flour/50% unbleached flour, and this is what we use as the base for the breads we sell at Lodgepole Market. The last few days I have been experimenting with 80% unbleached flour/20% whole wheat. We could do both if there was a demand. It makes a lovely sourdough bread with a more open crumb. (Bigger holes in the bread.) That's really a matter of preference, though: Some people like the butter on the bread and not on the plate.
