Salmon tartar with crispy leek and roasted garlic

Candied salmon and wild rice salad, seaweed aioli

Puree of local corn with, sockeye salmon, basil puree

Salad of heirloom tomatoes, salmon confit, fireweed honey and lime dressing

Thai-style salmon, wrapped in rice paper, new potato and caramelized onion salad, grilled peppers, coconut curry sauce

Annual Happiness Dinner – February 17th

Baked oyster with coconut curry

Fuji Apple, Truffle Manchego cheese and toasted walnut salad, truffle honey vinaigrette

Mushroom chowder with braised pork belly, potato and celeriac

Winter salad of seared albacore tuna, roasted vegetables, olives, saffron aioli

Cooking classes are starting back up on the farm in February with an entertaining class on Asian noodles. We will be making fresh noodles (wheat and rice) and serving a few of my favourite dishes.

Asian Noodles Class – February 24th, 12 noon - 4 pm

This will be a fun class. (Bill is the co-author (with Stephen Wong) of New World Noodles)

- making noodles from scratch
- Shanghai noodles with beef, soy, onion, cilantro and ginger
- Pan-fried green onion noodle cakes with smoked salmon
- Rice noodles with spot prawns, Asian greens and sweet soy
- Chilled soba noodles with lemon, honey, cucumber and avocado
