Easter lunch this year started at midnight… because apparently that’s when responsible adults start a 5 lb brisket in the slow cooker 😂

And somehow? It worked.

The brisket was tender, pull-apart, packed with deep flavour, and fed all 7 of us with room to spare. The day before, I also decided Easter needed a “special drink,” so naturally I hand-juiced 5 lemons and simmered lavender petals for homemade lavender lemonade… because I clearly don’t believe in making things easy for myself.

We had mashed potatoes, roasted brussel sprouts, potato salad, buns, salad, carrot cake, apple crisp, and a house full of people in our small space. Oh, and it was literally snowing outside for Easter — but inside still felt warm, full, loud, and so good.

All in all, it turned out way better than I expected.

Part two - What I do when I don't know what I'm doing. Brisket.

Step one: research like confidence can be downloaded.

Step two: pick the recipe least likely to ruin Easter.

Step three: avoid it for a little longer.

Step four: proceed with entirely manufactured confidence.
