Here's a simple recipe for a vegetable toast sandwich:
Ingredients:
• 4 slices of bread (any type you prefer)
• 1 small cucumber, thinly sliced
• 1 small tomato, thinly sliced
• 1 small onion, thinly sliced
• 1/2 medium-sized capsicum (bell pepper), thinly sliced
• 4-6 lettuce leaves
• Salt and pepper to taste
• Butter or mayonnaise for spreading
Instructions:
1. Prepare all the vegetables by washing and slicing them thinly.
2. Lay out the slices of bread on a clean surface.
3. Spread butter or mayonnaise on one side of each bread slice.
4. Place a few lettuce leaves on two of the bread slices.
5. Arrange the cucumber, tomato, onion, and capsicum slices on top of the lettuce leaves.
6. Sprinkle salt and pepper to taste over the vegetables.
7. Place the remaining bread slices on top of the vegetables, butter/mayonnaise side facing down, to form sandwiches.
8. Press down gently on the sandwiches to hold them together.
9. If desired, you can trim off the crusts for a neater presentation.
10. Cut the sandwiches diagonally or into halves to create smaller triangular sandwiches.
11. Serve the vegetable toast sandwiches immediately and enjoy!
