National Lunchbox Week, the brainchild of Nutrition Australia, is a fantastic way to kick off the school year. It’s a great time to establish some new lunchbox habits while the excitement of returning to school is still fresh.

The Nutrition Australia website has a wide range of awesome tips and resources, including recipes and videos, and it’s worth having a look at them.

But by far, my fave tip can be found in their handout on ‘Healthy Leftovers For Lunchboxes.’ https://www.lunchboxweek.org/_files/ugd/9d5a8d_263a269f6502414a8a8302af26c5907e.pdf
What I love about using left-overs in lunchboxes:
• using leftovers for lunches is quicker to prepare the night before straight after dinner when the food is already out, ready to be packed into lunchboxes, and there is no extra tidy-up
• When School and preschool lunches are all sorted the night before, it saves you precious time in the morning
• The evening meal is most often when we prepare a well-balanced meal with good sources of protein, vegetables, legumes and grains. Using the left-overs for lunch is an easy way to have a balanced lunchbox.
• Saves waste
• Saves time
• It makes for tasty lunches
Remember to include a frozen cold pack to ensure foods remain cool until lunchtime.

And with the wide range of lunchboxes available with good seals and compartments, serving up delicious lunches using leftovers from the night before has never been more convenient. Some even come with a fork or spoon. My fried rice makes a tasty left over lunch, served hot or cold. Make life easier for yourself by serving up leftovers in lunchboxes.

For National Lunchbox Week, I have road-tested a sugar-free banana cake that is quick and easy to prepare, tastes delicious, all without the need for refined sugar. Perfect for any lunchbox! Let me know if you want the recipe.

Thank you to Dr Kay Toomey and co from SOS Approach to Feeding for packing in so much information during the five days we were in Sydney. It flew by quickly. Linda is very proud to be awarded her training certificate and looks forward to supporting families with fussy and/or problem eaters.

Arrived in Sydney today! I spent the afternoon settling in before starting my weeklong training for the SOS Feeding Course. Looking forward to learning more about how to support the most restrictive eaters and those with sensory aversions.
