In the glow of the Long Chim basement, heat, smoke and flavour collide. Duck and Pinot Noir take centre stage across a tasting menu, from crisp spring rolls and duck larp through to red curry and pad kra pao, with Australian wines poured throughout.

Meet Head Chef Welly Yuan, the man behind the heat, heart and hustle of Long Chim.

Since arriving in Australia from China in 2009, Welly's culinary journey has taken him through some serious kitchens, from Red Spice Road and Hawker Hall to the opening team at Long Chim Melbourne in 2016. Now leading the charge at Long Chim Perth, his approach to Thai street food is built on balance, precision and the holy trinity of any Thai cupboard: palm sugar, fish sauce and tamarind water.

Welly works through the open kitchen, somewhere between the fire, the flavour and the beautiful chaos of service.

Every Wednesday throughout July & August, Long Chim is serving Curry Nights.

Jungle Curry, Khao Soi, Green Curry of Chicken and more — all made to share, all served with rice. From 5:00pm onwards.
