Do you love to watch the katsuobushi (aka dried bonito flakes) dance on top of your takoyaki when they arrive at your table? Us too. These thin, delicate shavings are made from smoked and dried fish, providing a rich, smoky umami flavor. When placed on hot takoyaki, they appear to dance due to heat-induced rehydration of the fish muscle fibers.
