Charcoal grilled fish, Greek peppers, tomato. The charcoal does what no other cooking method can do, it draws out the natural oils of the fish, chars the skin to a crisp, and leaves a depth of flavour that is impossible to replicate. The Greek peppers and slow-cooked tomato underneath do the rest.

Rapsani Terra Petra 2019. A Protected Designation of Origin wine from the volcanic slopes of Mount Olympus, made from three grape varieties found almost nowhere else in the world — Xinomavro, Krassato, and Stavroto. The terroir here is rocky and mineral-rich, and you can taste it. Dark fruit, dried herbs, a long finish with real grip and depth. This is Greek wine at its most serious and most rewarding.
