One of my favourite batch cooking tricks is freezing chicken already in the marinade.

As it thaws overnight in the fridge, all those flavours soak into the chicken, so dinner is halfway done before you even start cooking.

This one becomes the easiest satay chicken, and it’s just $4.90 a serve.

Marinade:
• 8 chicken thighs, cut into strips
• ½ tin coconut milk
• 2 tbsp soy sauce
• Juice of ½ lime
• 3 garlic cloves, crushed
• 1 tbsp brown sugar
• 1 tsp curry powder
• 1 tsp ginger

Mix everything together, pop it into a freezer bag and freeze.

When you’re ready to eat, thaw overnight in the fridge, then stir-fry with 1 sliced onion and 1 sliced capsicum.

Satay sauce:
• ½ packet coconut milk powder (¼ cup)
• 1 cup crunchy peanut butter
• 1 garlic clove, crushed
• ¼ cup sweet chilli sauce
• 1 cup chicken stock

Heat gently in a saucepan, stirring until smooth.

Serve with rice and enjoy! 💛
