American Buns 🍔 (~1.2 kg dough | 10–11 buns, 110 g each)

Ingredients:

- 675 g flour (type 0)
- 75 g sugar
- 10 g dry yeast (≈30 g fresh yeast, 1:3 ratio)
- 45 g soft butter
- 3 eggs (2 for dough + 1 for brushing)
- 135 ml water
- 135 ml whole milk
- 9 g salt
- Sesame seeds (as needed)

Method:

1. Activate the yeast (optional)
Mix dry yeast with lukewarm water + milk (~30–35°C) and a pinch of sugar.
Let sit for 5–10 minutes until slightly foamy.

2. Make the dough
In a bowl:
Combine flour and sugar
Add the liquid + yeast mixture
Add 2 eggs
Mix and start kneading.

3. Add butter and salt
Incorporate soft butter gradually
Add salt at the end
Knead until smooth, elastic, slightly tacky.

4. First proof
Cover and let rise in a warm place for 1.5–2 hours, until doubled.

5. Shape
Divide into 10–11 pieces (~110 g each)
Shape into tight balls
Place on a baking tray

6. Second proof
Let rise 30–45 minutes until puffy.

7. Finish
Brush with egg+milk and sprinkle sesame seeds.

8. Bake
Bake at 180°C (static oven) for 15–20 minutes until golden brown.

Recipe
- 250 g bread flour
- 112 g water
- ½ egg yolk (≈10 g)
- 7.5 g fresh yeast
- 30 g sugar
- 5 g salt
- 25 g butter (soft)

Lamination Butter
- 130 g butter (for laminating)

Folds
- x2 single fold

Cooking
- 165°C - 25 min
