I've run 250 pax-people parties on my own. No magic, no shortcuts, just solid preparation , calm ex*****on, and a sharp eye on timing.

The real secret? Being organised.
Not overcomplicating the form, just focusing on flavour that delivers every time.

Kitchens aren't always picture-perfect. Staff shortages happen. Illness hits. Suppliers run late. There are a hundred reasons things can go wrong.

But guests don’t see any of that. What they remember is the food. The taste. The feeling it gave them.

That’s why I don’t chase fancy when I don’t have the means for it. You don’t win people with foam and tweezers when the brigade is down two chefs.

You win them with flavour they trust, dishes they crave, and comfort they come back for.
Reliably good beats occasionally brilliant, every time.

So yes, I’ve done big numbers solo. But I didn’t do it by trying to be a hero. I did it by knowing what works, and making sure every plate told the same story: good food, done right.

That’s how you build trust. That’s how you build a reputation.
