Baked cheesecake
750g Cottage cheese smooth
3tins condensed milk
240ml lemon juice
15ml Vanilla essence
3 eggs
Zest of 1 lemon
Juice of 1 lemon
* Blend all the ingredients together in a mixer or an actual blender.
300g Tennis biscuits
150g butter
*Line the 28cm tin with baking paper at the bottom and on the sides. Brush with butter before and after lining so that the paper sticks.
*Add crumb mix and press it so that it is level and smooth, even all around. I usually use a spoon.
*Pour the cheesecake mix over the biscuits and bake at 160degrees for 30minutes.
*Allow to set until completely cool.
Topping
250g strawberries cut up
125ml sugar
250ml water
1pkt strawberry jelly
*Bring it all to the boil
