The fourth panel provided a deep dive into the Food & Beverage (F&B) supply chain, for the Responsible Travel Meets Green Design: Speaker Series—an official partner event of the inaugural hashtag , hosted by Fenn Designers & 137 Pillars Suites & Residences Bangkok.

By showcasing innovative solutions and partnerships that allow hotels and restaurants to achieve the gold standard of sustainability: zero waste to landfill.

This session was highly actionable, focusing on operational tools and conscious sourcing. Our panel featured pioneering entrepreneurs and industry standards experts with our host-in-chief Sanjog Modgil:

Ben Sorum, Co-Founder, WILDER Hydration
Louis-Alban Batard-Dupre, Founder & CEO, Yindii
Eric Chan, Co-Founder, Sarnies
Marco Sandri, Global Manager, The PLEDGE on Food Waste

The discussion on "The Conscious Supply Chain: From Source to Service, Without Waste" focused on redesigning hotel operations to achieve a circular economy and eliminate waste, especially in food and materials.

The core themes emphasize that sustainability must be embedded across the entire chain:

1.Redefining Waste Management: The goal is to move past recycling to "Refuse, Reduce, Reuse," with a heavy focus on eliminating single-use plastics and implementing systems like converting food waste into valuable resources (e.g., biogas, animal feed).

2.Strategic Partnerships: Hotels must foster long-term collaborations with suppliers

3.Data and Visibility: Information sharing (like real-time demand and shelf-life data) is crucial to solving the massive issue of food waste before it happens.

The panel concluded the day by proving that a conscious supply chain is the final, essential step in a sustainable hotel strategy, providing clear pathways to reducing costs, eliminating waste, and enhancing brand reputation from the farm gate to the guest's table.

Moving beyond then hotel walls, we highlight our third panel for the Responsible Travel Meets Green Design: Speaker Series—an official partner event of the inaugural , hosted by Fenn Designers & 137 Pillars Suites & Residences Bangkok.

The third panel moved the conversation to explore the broader economic forces driving sustainability and how businesses can capitalize on evolving consumer and finance trends. The focus was firmly on money, data, and market demand. Featured experts with our host-in-chief Sanjog Modgil translate macro-trends into actionable business strategies:

Branavan Aruljothi, Area Manager - Mekong, Booking.com
Poramate Rakkarnngarn, VP, Manager, Sustainability Project Management and Integration, Siam Commercial Bank (SCB)
Nick Cheng, Sustainability and Strategy Manager, Wongphai
Natalie van Ogtrop, Sustainability Manager, YAANA Ventures

The focus is on:
1.Innovation as the Enabler: Using smart technology (AI, sensors) and circular design (plastic elimination, local sourcing) to drive radical efficiency and reduce the environmental footprint.

2.Customer as the Driver: Eco-conscious guests are demanding authenticity, transparency, and social value (local community support) and are increasingly willing to pay a premium for it, turning green efforts into a significant revenue stream.

3.Economic Strategy: Integrating these practices provides long-term benefits like cost reduction, competitive differentiation, and improved access to capital in the evolving Green Economy.

This panel delivered the clear message that sustainability is no longer a cost center—it is an investment opportunity that is validated and driven by both the financial sector and the end consumer.
