🍓 Strawberry Cheesecake Ice Cream 🍰
Rich, creamy homemade strawberry cheesecake ice cream with tangy cheesecake base, sweet strawberry swirls, and buttery graham cracker crumble topping — the ultimate summer indulgence!
Ingredients (makes about 1.5 quarts)
Cheesecake Ice Cream Base:
• 8 oz (226g) full-fat cream cheese, softened
• 1 cup (200g) granulated sugar
• 2 cups (480ml) heavy cream
• 1 cup (240ml) whole milk
• 1 tbsp vanilla extract or vanilla bean paste
• ¼ tsp salt
• 2 tbsp fresh lemon juice
Strawberry Swirl:
• 12 oz (340g) fresh or frozen strawberries, hulled
• ⅓ cup (67g) sugar
• 1 tbsp lemon juice
• 1 tsp cornstarch (optional, for thickening)
Graham Cracker Crumble:
• ¾ cup (90g) graham cracker crumbs
• 2 tbsp melted butter
• 1 tbsp sugar
• Pinch of cinnamon
Instructions
1 Make strawberry swirl: Cook strawberries, sugar, and lemon juice in a saucepan over medium heat until berries break down (8–10 minutes). Mash or blend slightly. Mix cornstarch with a little water and stir in if using; cook until thickened. Cool completely, then chill.
2 Make crumble: Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Spread on a tray and bake at 350°F (175°C) for 8–10 minutes until golden. Cool.
3 Make ice cream base: Beat cream cheese and sugar until smooth. Gradually mix in cream, milk, vanilla, salt, and lemon juice until fully combined and smooth. Chill mixture for at least 2 hours (or overnight).
4 Churn: Pour chilled base into an ice cream maker and churn according to manufacturer’s instructions (usually 20–30 minutes) until it reaches soft-serve consistency.
5 Assemble: Layer churned ice cream with spoonfuls of strawberry swirl and some graham crumble in a container. Swirl gently. Top with more crumble. Freeze 4+ hours until firm.
6 Serve: Scoop into bowls or cones, top with extra fresh strawberries, crumble, and a drizzle of honey if desired.
Pro tip: For extra cheesecake flavor, add ½ cup sour cream to the base. Let the ice cream soften 5–10 minutes before scooping for the best texture.
I had a bunch of ripe strawberries and decided it was the perfect day for homemade ice cream. I made a silky cheesecake base, swirled in fresh strawberry compote, and added crunchy graham cracker bits for that classic cheesecake bite. Churning it while the sun streamed in felt like pure summer magic. That first spoonful — creamy, tangy, fruity, with the perfect crunch — was absolute heaven in a bowl.

🍪 White Chocolate Funfetti Cookies ✨

Thick, chewy brown butter cookies loaded with white chocolate chunks, colorful rainbow sprinkles, and finished with flaky sea salt — the perfect sweet-salty birthday-worthy treat!

Ingredients (makes 12-16 large cookies)
Cookie Dough:
• 1 cup (226g) unsalted butter, browned and cooled
• ¾ cup (150g) brown sugar
• ½ cup (100g) granulated sugar
• 2 large eggs, room temperature
• 2 tsp vanilla extract
• 2½ cups (300g) all-purpose flour
• 1 tsp baking soda
• ½ tsp baking powder
• ¾ tsp salt
• 1 cup (170g) white chocolate chunks or chips
• ½ cup rainbow sprinkles (jimmies work best)
Topping:
• Flaky sea salt (like Maldon)
• Extra white chocolate chunks and sprinkles for topping
Instructions
1 Brown the butter: Melt butter in a saucepan over medium heat, stirring until it turns golden and smells nutty. Cool completely to room temperature.
2 Mix dough: In a large bowl, whisk browned butter with both sugars until combined. Add eggs and vanilla, mixing well. Stir in flour, baking soda, baking powder, and salt until just combined. Fold in white chocolate chunks and sprinkles. Chill dough for at least 30 minutes (or up to 2 days).
3 Bake: Preheat oven to 350°F (175°C). Line baking sheets with parchment. Scoop large balls (about ¼ cup each) and place 2-3 inches apart. Press a few extra chocolate chunks and sprinkles on top. Sprinkle with flaky sea salt.
4 Bake 11-14 minutes until edges are golden but centers are still soft. Cool on the sheet for 5 minutes, then transfer to a rack.
Pro tip: Chilling the dough prevents spreading and develops better flavor. For extra thick cookies, freeze the scooped dough for 15 minutes before baking.
I wanted to bake something fun and nostalgic, so I browned the butter for extra richness and loaded the dough with white chocolate and plenty of sprinkles. The kitchen smelled amazing as they baked, and pulling them out with those golden edges and melty chocolate chunks was so satisfying. That first bite — chewy, buttery, sweet, with the salty finish — made them an instant favorite.

🍋 Lemon Poppy Seed Sheet Cake 🍰

Bright, tender lemon poppy seed cake baked in a sheet pan, topped with a luscious lemon cream cheese frosting and a swirl of lemon glaze, finished with extra poppy seeds.

Ingredients (for a 9x13 sheet cake, serves 12-16)
Cake:
• 2½ cups (300g) all-purpose flour
• 2½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ¾ cup (170g) unsalted butter, softened
• 1¾ cups (350g) granulated sugar
• 3 large eggs, room temperature
• 1 tbsp lemon zest (from 2-3 lemons)
• ⅓ cup fresh lemon juice
• 1 tsp vanilla extract
• 1 cup (240ml) buttermilk (or whole milk + 1 tbsp lemon juice)
• 3 tbsp poppy seeds
Lemon Cream Cheese Frosting:
• 8 oz (226g) cream cheese, softened
• ½ cup (113g) unsalted butter, softened
• 3½ cups (420g) powdered sugar
• 2 tbsp fresh lemon juice
• 1 tsp lemon zest
• 1 tsp vanilla extract
• Pinch of salt
Lemon Glaze (optional drizzle):
• 1 cup powdered sugar
• 2-3 tbsp fresh lemon juice
Instructions
1 Preheat oven to 350°F (175°C). Grease and line a 9x13-inch baking pan.
2 Make the cake: Whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream butter and sugar until light and fluffy (3-4 minutes). Beat in eggs one at a time, then lemon zest, lemon juice, and vanilla. Alternate adding dry ingredients and buttermilk, starting and ending with dry. Fold in poppy seeds.
3 Bake: Pour batter into prepared pan and smooth the top. Bake 28-35 minutes until a toothpick comes out clean or with a few moist crumbs. Cool completely in the pan.
4 Make frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar, then lemon juice, zest, vanilla, and salt. Beat until fluffy.
5 Assemble: Spread frosting generously over cooled cake. Drizzle with lemon glaze and sprinkle extra poppy seeds. Cut into squares.
Pro tip: For extra moisture, brush the warm cake with a simple lemon syrup (equal parts lemon juice and sugar, warmed until dissolved).
I had a bag of fresh lemons and decided to bake something sunny and comforting. I stirred up this bright lemon poppy seed batter, baked it into a soft sheet cake, then topped it with tangy cream cheese frosting and a quick lemon drizzle. The kitchen smelled incredible, and that first forkful — tender cake packed with lemon flavor and crunchy poppy seeds, plus the creamy frosting — was pure happiness in every bite.
