Took some time to make some spiced cookies with my 3 year old. She loves helping mommy in the kitchen, and her favorite thing to do it cut and frost cookies.
These yummy Almond Cinnamon Cookies are and and just perfectly spiced with cinnamon that had us craving fall and the cooler weather. See the recipe below, and save this post to try them yourself!
Almond Cinnamon Cookies
-2 cups almond flour
-1 cup powdered sugar
-1 tablespoon cinnamon
-2 tablespoons water
-1 tablespoon bottled lemon juice
-1/4 teaspoon salt
Cinnamon Sugar Glaze
-1/4 cup powdered sugar
-2 teaspoons water (give or take)
-1/8 teaspoon cinnamon
-1/2 teaspoon vanilla extract
1) Preheat oven to 390 degrees F and line baking tray with parchment paper or a silicone mat.
2) Sift the almond flour and powdered sugar into a large mixing bowl.
3) Add the cinnamon and salt to the bowl and whisk together well.
4) Add the wet ingredients and mix together. The dough will be clumpy at this point, and will need to be kneaded together with your hands.
5) Place the dough on a WELL FLOURED surface and roll to desired thickness - a thinner cookie will require less baking time and be crisper, and a thicker cookie will need longer baking time and be softer.
6) Cut out cookies on desired shape and arrange on the baking tray 2 inches apart.
7) Bake for 9-11 minutes depending on the size and thickness of your cookies.
8) Remove from oven and allow to rest on the baking sheet for 5 minutes before moving to a cooling rack to cool all the way.
9) Optionally, sprinkle cookies with granulated sugar before baking and press in lightly with your fingers.
10) Optionally, whisk all glaze ingredients together in a small bowl and drizzle over completely cooled cookies.
Store cookies in an airtight container for up to a week.
