mixing routine for my classic country sourdough
74% hydration
30% local whole grains

I purposely specify this because there’s a lot of nuance with these routines and different grains and hydration levels. The best thing you can do is keep an eye on your dough and see how it behaves. This is also the reason that I don’t put exact times for mixing. The timing changes for me season to season & sometimes mix to mix. I don’t claim to be a teacher, but if watching this routine helps someone that is wonderful! I love my Sunmix USA mixers from PizzaGoods. water + starter
slowly add flour
mixing at 150 rpm

pause mixer
cover + let rest
30 minutes

150 rpm
add salt
+ small amount of water

turn up to 200 rpm
watch dough break up
& come back together

increase speed to 250 rpm
watch for cohesive dough
pulling from sides

cover and let rest
8-10 minutes
before checking dough strength and removing from bowl
