The best back-of-house operations don't run on fancy equipment or trendy menus. They run on fundamentals most people never see.

Pre-shift meetings that take five minutes and prevent five hours of confusion. Prep systems that treat mise en place as non-negotiable. Call-and-response communication habits that exist for a reason, because in a kitchen there's no time for an email. And sanitation disciplines built into every task, not saved for the end of the shift.

When these fundamentals are in place, the BOH runs like it should. When they're not, everyone from the line to the dining room feels it.
