Manicures are one of my favorite ways to practice self-care: They instantly relax me and allow me to disengage from the other worries in my world to focus on just my nails. In fact, it's not unusual for me to give myself a new one every few days! I also love to experiment with new colors and match my nails to both my outfits and moods.

⏳️I had always thought that professional salon manicures were a waste of time and money, since they usually take at least half an hour to complete and are a lot more expensive than buying some polish and doing it yourself on the fly. However, I was always ended in really bad results. It is so easy to give up but trust me with all this free information on the Internet and videos you will realize it worth the effort and you will save tons of money 💰 💸 !!!!

Greek-Style Chicken Fricassee Avgolemono⠀
Fricassee is a Greek recipe made with pork, lamb or chicken, with lots of lettuce, aromatic herbs and the traditional Greek avgolemono sauce. ⠀
Although it might need a lot of prep work (cleaning and dicing the lettuce, and cutting all the herbs) it's super delicious and quite healthy. ⠀
PS: Instead of lettuce, you can use other greens as well. I have made it in the past with kale and spinach and turned out AMAZING!!!!⠀

Some trivia about the origin of fricasee:⠀
📍I don’t know the origin of this recipe but I assume this was originally a French recipe, as fricassee is a French word. ⠀
📍The French recipe is a stew, usually with a white sauce, as wine and cream are used.⠀
📍Nicolas Tselementes, a famous Greek chef, who studied in Vienna, introduced French cuisine to the Greeks, at the beginning of the previous century.⠀

Ingredients:⠀
✔️ ⠀
💚1 chicken (cut in pieces)⠀
💚6 green onions, including green part, (finely chopped)⠀
💚1 small onion (finely chopped)⠀
💚1/2 cup olive oil⠀
💚4-5 very big lettuces, romaine type⠀
💚1/2 cup dill (finely chopped)⠀
💚Salt and freshly ground black pepper⠀
💚2-3 cups water or chicken broth (like Wild Harvest®])⠀⠀
For the avgolemono sauce⠀
• 2 eggs⠀
• ½ cup lemon juice⠀⠀
Directions:⠀
• Wash and cut the lettuce into 3 cm (1-inch) pieces.⠀
• Heat the olive oil in a saucepan and sauté the chicken both sides (5mins).⠀
• Add the onions (both types) and sauté them until they become translucent.⠀
• Add the lettuce and water or broth (I used Wild Harvest®] rich Chicken Bone broth) to cover the chicken and bring to a boil. ⠀
• Reduce the heat and simmer until the chicken becomes tender. If needed, add more water until the chicken is well cooked (~20-25 mins).⠀
• Add the dill, stir well and remove from the heat; set aside for 10 mins.⠀
📍Avgolemono sauce:⠀
• Beat the egg whites until frothy. Add the yolks and the lemon juice, while still mixing.⠀
• Take a ladle of hot broth from your pot and slowly add it to your egg and lemon mixture while whisking.⠀
• Pour the avgolemono sauce into your saucepan and mix.⠀
• Leave it to rest for 10 - 15 minutes and then serve.

Happy Friday my good friends!!
The best way to teach kids about eating right is to get them into the kitchen to prepare healthy meals together. Cooking is a valuable life skill that teaches children about nutrition and food safety, as well as building math, science, literacy and fine motor skills.

So I decided to use Hello fresh to do the heavy lifting in premeasuring and collecting the necessary ingredients as well as provide directions with step by step photos!!! I was totally amazed at how easy was for Fay to prepare this dish and feel proud of herself that she cooked something from start to finish 😀
