I HAD TO DO THESE AGAIN. Loved them with the cheesy mash but doing them with the rice and chips made it a bit more filling which I prefer cause then I’m not tempted to snack when love island is on.

It's been a long time since I've had h**p soy sauce (Sichuan-style spinach with sesame sauce). Make a sticky sea of ​​sesame sauce around the quickly boiled spinach. The key is to add a little kick to the rich flavor of the sesame sauce using chili pepper oil or pepper oil. When combined with the sweetness of the spinach, it tastes strangely delicious, and the chopsticks go through many times faster than just dipping.

Sweet potato, spinach & chickpea salad 🥗

I’m surprised how many people hate salads. 😮 I love a salad. You can add so many delicious ingredients without sticking to the same limp boring lettuce.
This sweet potato salad is full of vitamins, protein and healthy fats! ☺️ You can change the ingredients as much as you like to suit your own taste. This is also a great meal prep recipe 🙌🏻

Ingredients:
🌱1-2 large sweet potatoes
🌱2 red onions
🌱1 tbsp brown sugar
🌱2 tbsp balsamic vinegar
🌱1 can of chickpeas
🌱A few handfuls of your preferred greens (I used spinach or kale)
🌱Optional - 1 tsp paprika, 1 tsp dried chives, 1/2 tsp chilli flakes and a pinch of salt and pepper
🌱Optional - feta, goats cheese or vegan cheese

Salad dressing:
🌱1 tbsp olive oil
🌱1 tbsp red wine vinegar
🌱2 tsp maple syrup
🌱1 tsp Dijon mustard

Roast your sweet potato and chickpeas with your spices until golden brown. Cook the onions, brown sugar and balsamic vinegar until softened and caramelised.
Add your greens first, then layer your sweet potatoes, chickpeas and caramelised onion. If you want to add cheese, crumble this over the salad, the drizzle the dressing on top.
