The Mice are both back in town! We are offering two really special meals this week.

Let’s start with the City Mouse. After a visit to her favorite Indian store in Maryland, she was inspired to make CURRY CHICKEN WITH COCONUT MILK, VEGGIES, AND CILANTRO LIME RICE. The sliced carrots and baby spinach are the traditional vegetables of this dish, along with onions, garlic, and coconut milk which enhance the flavor even more. The last time we offered curry chicken it sold out by Tuesday. Don’t miss out, order today!

It’s Chicken and Bacon Lasagna Roll Ups for the Country Mouse this week. Think of it as the all ingredients you love, rolled up together. Each lasagna noodle is filled with an abundance of cheeses, tender shredded chicken, crispy bacon sautéed with onion, fresh garlic, Italian spices, and finally topped with your choice of a Creamy Garlic Parmesan or Roasted Red Bell Pepper Sauce. Both sauces are homemade and bursting with flavor! This dish freezes well, have one for dinner and freeze one for later. Can make as gluten free upon request.

The Country Mouse is missing all the crazy Roanoke weather and its related turmoil (whipping wind, rain, no power for 12 hours, couldn’t watch the Oscars, etc.). Instead she is sitting on some beach soaking up the beautiful 80 degree days. We miss you Country Mouse! Hurry home to us.

It’s another solo week for the City Mouse. People have been asking for Indian food so here goes: BUTTER CHICKEN & NAAN (that yummy flat bread you get from Indian restaurants). Yogurt, almonds, tomatoes, garlic and some lovely fragrant Indian spices marinate boneless chicken thighs. Then they are cooked in a delicious sauce of honey and coconut milk. The coconut milk helps to cool off the spice. Add some red onions and a few more seasonings and supper will be on the STOOP!

It’s a GREEK PASTA BAKE for Country Mouse this week.
