Brunch for two in the dining room. Everything here is of course plant-based (vegan). ✊🏽
We cut up a bunch of fruit (honeydew, watermelon, and mango). It’s more cost effective to buy the fruit and cut it yourself!
Two vegan sausage patties. .
Vegan Sausage links cut into pieces (cooked separately then added to the vegetables). I sautéed (in vegetable broth) broccolini, bell peppers, mushrooms, spinach. Seasoned with black pepper, lemon pepper, onion powder, and a splash of soy sauce and liquid smoke. .
Drinking acai smoothies (with blended acai powder, almond milk, frozen pineapples and strawberries, and a fresh banana). .

Here’s what I had for lunch today! It’s a veggie pilaf that’s of course . I modified the original recipe from to ensure that its oil free, vegan, and flavorful.
Here it is:
- sauté, in water, one small white onions and one half of a red bell pepper. Add one tbsp if minced garlic.
- Then add one cup of uncooked brown rice, one can of garbanzo beans and 1 3/4 cups of vegetable broth.
- Bring to a boil. Reduce heat to simmer for 20 minutes or until rice is tender.
- Remove from heat. Add 1 tsp of each: lemon pepper, cayenne pepper, and black pepper for spice!
- Parsley or cilantro for garnish (optional).
