Cooking whole fish over a live fire is one of the most rewarding foods!
So primitive and comforting! All you need is the most simple presentation! I’d much rather cook over live fire then any other method of cooking! We turned this fish into lovely little lettuce wraps with raw veggies and a chili & fish sauce vinaigrette

The boyz and me know how to throw down in the kitchen! Some great meals for my 40th bday weekend with the fellaz!

This is the pasta!! Spaghetti alla bottarga! I haven’t had it anywhere that does it as well outside Sardinia except but I think I might have come pretty close! I wish more people understood bottarga and just how amazing it is! I’m also a huge fan of its Japanese close cousin mentaiko which used to do a banging noodle dish with😋
