🥔 Zuppa Toscana Soup (Easy Version)

Ingredients
• 1 lb (450 g) Italian sausage (mild or spicy)
• 4 slices bacon, chopped (optional but 🔥)
• 1 small onion, diced
• 3 cloves garlic, minced
• 4 cups chicken broth
• 3–4 medium russet potatoes, sliced into thin rounds or half-moons
• 1 cup heavy cream
• 2 cups kale, chopped (or spinach)
• Salt & black pepper, to taste
• Optional: red pepper flakes

Instructions
1. Cook bacon & sausage
In a large pot, cook bacon until crispy. Add sausage and cook until browned. Break it up as it cooks.
2. Add onion & garlic
Toss in onion and cook until soft (3–4 min). Add garlic and cook 30 seconds.
3. Add broth & potatoes
Pour in chicken broth and add potatoes. Bring to a boil, then simmer 12–15 minutes until potatoes are tender.
4. Make it creamy
Stir in heavy cream and kale. Simmer 3–5 more minutes until greens are wilted.
5. Season & serve
Add salt, pepper, and red pepper flakes to taste.

Tips
• Thicker soup? Lightly mash a few potatoes in the pot.
• Lighter version? Use half-and-half or milk.
• No kale? Spinach works great.

For a cozy day like today and using ingredients you already have to whip up a simple yet tasty meal.

🌶️ Simple Chili (30–40 minutes)

Ingredients
• 1 lb (450 g) ground beef (or turkey)
• 1 small onion, diced
• 2 cloves garlic, minced (or 1 tsp garlic powder)
• 1 can (15 oz / 400 g) diced tomatoes
• 1 can (15 oz / 400 g) kidney beans, drained & rinsed
(or black/pinto—whatever you’ve got)
• 1 cup beef or chicken broth (or water)
• 2 tbsp chili powder
• 1 tsp cumin
• Salt & pepper, to taste
• Optional: ½ tsp paprika or cayenne (for heat)

Instructions
1. Brown the meat
In a pot over medium heat, cook the ground beef with the onion until browned. Drain excess fat if needed.
2. Add garlic & spices
Stir in garlic, chili powder, cumin, salt, pepper, and any extra spice. Cook 30 seconds until fragrant.
3. Add the rest
Pour in tomatoes, beans, and broth. Stir well.
4. Simmer
Bring to a gentle boil, then lower heat and simmer uncovered for 20–30 minutes, stirring occasionally.
5. Taste & adjust
Add more salt, spice, or a splash of water if it’s too thick.

Optional Toppings (highly encouraged)
• Shredded cheese 🧀
• Sour cream
• Chopped green onions
• Crackers or cornbread
