π° Blueberry Cheesecake β A Luscious, Berry-Infused Classic! πβ¨
Indulge in the creamy richness of a classic cheesecake elevated by a vibrant blueberry swirl and topping. This dessert is perfect for celebrations or any time you crave a harmonious blend of tangy creaminess and fresh berry sweetness!
π Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs, at room temperature
1 tsp vanilla extract
1/2 cup sour cream
2 tbsp all-purpose flour
For the Blueberry Swirl & Topping:
2 cups fresh or frozen blueberries (if using frozen, thaw and drain)
1/3 cup granulated sugar
1 tbsp lemon juice
2 tsp cornstarch mixed with 2 tsp water (optional, for thickening)

Prepare the Crust πͺ:
Preheat your oven to 325Β°F (163Β°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let cool.
Make the Blueberry Topping π:
In a small saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Bring to a simmer and cook for about 5 minutes until the blueberries start to break down. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another minute until slightly thickened. Remove from heat and let cool.
Prepare the Cheesecake Filling π₯£:
In a large bowl or stand mixer, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and flour until fully incorporated.
