🧁 Cinnamon Sugar French Toast Muffins 🧁
Ingredients
For the Muffins:
1½ cups all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
½ teaspoon fine salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup whole milk (or any milk of your choice)
2 large eggs
¼ cup unsalted butter, melted (plus extra for brushing)
1 teaspoon pure vanilla extract
For Coating:
½ cup cinnamon sugar (mix ¼ cup granulated sugar with 1–2 teaspoons ground cinnamon)
Instructions
Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it to prevent sticking.
Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth and well blended.
Form the Batter: Pour the wet ingredients into the bowl of dry ingredients. Gently stir until just combined—do not overmix, as this can make the muffins dense. A few lumps are perfectly fine.
Fill the Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ⅔ full.
Bake the Muffins: Bake in the preheated oven for 15–18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Prepare the Coating: While the muffins bake, prepare the cinnamon sugar by mixing the granulated sugar and ground cinnamon in a small bowl.
Coat the Muffins: Once the muffins are done, let them cool slightly (just enough to handle). Brush the tops of each muffin lightly with melted butter, then roll them in the cinnamon sugar to coat evenly.
Serve and Enjoy: Serve the muffins warm for the best flavor and texture. Pair them with a hot cup of coffee or tea for an extra cozy experience.
