Tuscan Salmon
Make a super easy gorgeous sauce with cherry tomatoes, garlic, red chili flakes and oregano. If you prefer a smoother sauce, blend it to desired texture. Now add in baby spinach, cooked cannellini beans, some cream (I used a bit of goat cheese) and simmer for a few minutes. Add some parmegiano reggiano to finish.
Top with beautifully roasted spiced salmon (425F, 7 min) for a high end everyday dinner!

Pro tip: if you have some pre-cooked cannellini beans in the freezer this meal comes together in a snap (and you control the sodium too!)

1/2 cup of No Salt Added Cottage Cheese
1 tsp of Green Coriander Chutney
Sprinkle Everything but the Salt seasoning blend
Top with 2 boiled eggs
Garnish with 5 almonds (toasted, unsalted)

This carb lover did not miss the toast at all!

Kathi Rolls at home! When you get that craving and its too cold to go out, we improvise!

All I did was marinate the chicken tenderloins with lots of fresh ginger and spices in Greek yogurt and cook the bite sized pieces for 10 min in the oven. The rest is just assembly.

Coriander chutney ( )
Cooked chicken pieces
Top with crunchy freshly pickled red onions

Roll it up, wrap in wax paper and enjoy! Waaay better than takeout!
