As we grow and shift into who we want to be, allowing ourselves the freedom to express oneself is part of the process. 🌱
As someone going through transformation myself, I am learning how important it is to honor what I am experiencing and to honor the feelings that come up while
remembering not to belittle how I feel.
When going through a transformation, I tend to keep to myself and become quiet. I am learning that expressing myself is part of the journey and truly is a superpower that we all have. 💪
I am safe to express myself.
I give myself permission to be heard.

AMP up the Flava! 🔥🔥🔥
Yesterday, I made Low Carb Enchiladas rolled up in zucchini and served with a Spanish Chicken Sausage Cauliflower Rice.
Pretty damn Delicious.
Definitely worth the labor and time.
My favorite part of this recipe was the Enchilada sauce Chicken mixture.
I roasted chicken tenders in the oven for an added tenderness.
I also added a can of mild green chilis.
And for an extra depth of Flavor, I toasted the spices.
♦️♦️Chef Kari's Tip:
When a recipe calls for Spices, Toast them in the pan with your vegetables before adding chicken (in this case) or broth.
This will Amplify the oils in the Spices
AND Add another Depth of Flavor to your Cooking 🔥🔥
This chicken mixture is varietal and can be used for multiple different meals.
I am looking forward to using this chicken...

💜Melt with cheese for a quesadilla
💜Roll up with sauteed peppers and onions for a wrap
💜Mix with scrambled eggs for breakfast burritos!

Emergency Freezer Meal Alert!
An Emergency Freezer Meal is a meal that you can have on hand in times you are Crunched for time and Growing Hangry.
All Emergency Freeze Meals must be:
Delicious
Quick to Cook, 30 Minutes or less
5 Ingredients Maximum
Align with my Healthier Eating Goals
Here is the Recipe for Orange Chicken with Cauliflower Rice, Pineapple, and Bell Peppers.
For this meal, I am using:
(Makes 3-4 Servings)
1 bag Trader Joe’s Orange Chicken
½ 20 oz can or fresh Pineapple Chunks
1 10-12 oz bag Cauliflower rice
1 Garlic clove, minced
1 Bell Pepper, chopped in Medium Chunks
In Addition to the Instructions on the Orange Chicken:
💜Add the Pineapple and Peppers to the skillet at the same time you add the Chicken.
💜Prepare the Cauliflower Rice in a Separate Skillet heated on medium high.
💜Sauté Cauliflower in 1 Tablespoon of Oil for 4-5 minutes on medium heat.
💜Add 1 Garlic and season with Salt and Pepper.
💜Serve the Orange Chicken over the Cauliflower Rice and Enjoy.
If you have unsalted Peanuts or Cashews, that would be a great topping for an Added Crunch.
A good hearty healthy meal down. Nailed it!
