Coquito is Puerto Rico’s signature cocktail. It is usually reserved for the holiday however in the spirit of I went ahead and made a summer friendly version…our very own “Limber de Coco”. Limber de Coco is a Puerto Rican style coconut ice cream made with coconut milk, evaporated milk, coconut cream, shredded coconut, vanilla and cinnamon. It’s the non-alcoholic version of the coquito and perfect for this summer heat! My grandmother used to make them in ice cube trays when we were little. In Puerto Rico they are made in little cups with popsicle sticks or as push pops. We are still debating if we are going to be adding them to the menu as transport can be an issue.
