😋 Rice Paper Mozzarella Sticks 💁🏼‍♀️

-Ingredients :

8 (8 1/2") rounds rice paper
8 low-moisture mozzarella string cheese sticks
2 large egg
1 cup panko bread crumbs
1/3 cup finely grated Parmesan
2 tsp. dried basil
1 tsp. garlic powder
4 cups neutral oil
1/4 cup store-bought or homemade marinara sauce
2 Tbsp. chili garlic sauce
2 tsp. fish sauce
1 tsp. fresh lime juice
Kosher salt

💁🏼‍♀️ Baked Feta Frittata :

•Ingredients:

- 6 large eggs
- 1/2 cup crumbled feta cheese
- 1/2 cup milk (or cream for extra richness)
- 1 tablespoon olive oil
- 1/2 cup chopped spinach (or other veggies like tomatoes or bell peppers)
- 1 small onion, diced
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)

•Instructions:

1. *Preheat the oven* to 375°F (190°C) and lightly grease a baking dish or oven-safe skillet.
2. *Sauté the veggies*: Heat olive oil in a pan over medium heat. Add the onion and cook until softened, about 3-4 minutes. Add spinach (or other veggies) and cook until wilted. Remove from heat.
3. *Prepare the egg mixture*: In a bowl, whisk together eggs, milk, salt, pepper, and oregano. Stir in the sautéed veggies and crumbled feta.
4. *Bake*: Pour the egg mixture into the prepared baking dish and bake for 20-25 minutes, or until the frittata is set and slightly golden on top.
5. *Serve*: Let it cool for a few minutes before slicing and serving.
