Day 1 - testing the wines to get prepped for bottling. Adding some sulfite to ensure the wine stays clean in the bottle - all the numbers look good and we are setting up for the Monday bottling tomorrow

Racking the 2018 Carmenere to Stainless steel in the AViD barrel room (aka laundry room) to prepare for aging the 2019 Reds! Time to buy more oak!

Grape season is upon us with harvest in late Sept or early October. We are planning on Carmenere and possibly a white for this season...need to know who is interested in participating
Sangiovese fermentation photos. Sangiovese is a red Italian wine grape variety that derives its name from the Latin sanguis Jovis, "the blood of Jove".
Though it is the grape of most of central Italy from Romagna down to Lazio, Campania and Sicily, outside Italy it is most famous as the only component of Brunello di Montalcino and Rosso di Montalcino and the main component of the blend Chianti, Carmignano, Vino Nobile di Montepulciano and Morellino di Scansano, although it can also be used to make varietal wines such as Sangiovese di Romagna and the modern "Super Tuscan" wines like Tignanello.[4]
