As this new week begins, I can't say I know what's coming.
But I can say this: my heart is at peace. 🤍

Life did not got easier over the last two years, but I've stopped trying to carry tomorrow before it gets here.

A few of you know I've been walking through a very dark season. This upcoming week will mark the end of the most difficult chapter of my life, and for that alone, I'm choosing gratitude.

No matter what happens, it is well… because we know the One who holds the outcome.

Children don't automatically know what's important— we teach them by what we stop and notice.

A stingray.
A tiny crab.
A flower growing through the sidewalk.

If I treat those moments like they matter, she'll learn that this world is full of things worth protecting, respecting, and being curious about.

Sometimes the smallest lessons become the biggest ones. 🌀🌀🌀

For almost Athena's entire first two years of life, she only wanted to watch Moana. 😂🌺 Every. Single. Day. We eventually started watching it in different languages just to keep things interesting... and looking back, maybe that's where her love for adventure began. ✈️❤️

Baked Gnocci w/ Ground Beef and Veggies

Ingredients:
• 1lb ground beef
• 12 oz gnocci pasta
• 2 cups marinara sauce
• I cup ricotta cheese
• 2 cups shredded mozzarella cheese
• ½ cup grated Parmesan cheese
• 2 Zucchinis
• 1 Red Bell Pepper
• 1/2 a small onion
• Garlic
• 8oz can of diced tomatoes

Steps:
1. Preheat oven to 375°F
2. In a skillet, brown the ground beef- season! I like to brown the veggies as well, but that’s optional.
3. Add can of diced tomatoes to meat.
4. Stir in the marinara sauce.
5. In a baking dish, layer all of the ingredients (except mozzarella cheese).
6. Sprinkle mozzarella on top and bake for 20-25min.

I like to serve a Cesar salad in the side with this, but it is perfect as is! 🤌🏼✨
