Ready? We are. This is our favorite food on the planet: bull kelp seaweed. And its season is nearing. In just a few short weeks we’ll begin sourcing fresh, beautiful bull kelp and sugar kelp from our farming and harvesting partners. Annnd we just might be making it into something new so keep a look 👀 out.

We’re coming up on 10 years of Barnacle, and when we first started, kelp farming in Alaska was more of an idea than a reality. Over the years, we’ve sourced from many kelp farms across the state (10+). Some have grown alongside us, others were part of earlier chapters, and through it all, we’ve believed that transparency, shared learning, and supporting one another is how this industry moves forward.

That’s what brought us to Cordova this week, where a dedicated group of farmers (and wonderful support organizations) just installed a large scale kelp dryer 🙌 Our team had the chance to work alongside the farmers to help them think through production flow, food safety, and getting the system up and running.

And just yesterday, the dehydrator ran for the first time! It’s a meaningful step forward, and a reminder of what’s possible when knowledge is shared and people show up for each other. We’re excited for what this means for the future of kelp in Alaska, and for the opportunity to work more Alaska-grown kelp into our kelp chili crisp, seasonings, and sprinkles 🎉
