Healthy for less

We all see our grocery bills going up, but not only that, restaurant bills are also higher these days!

Making healthy and affordable dinners at home is the way to go and this dinner tonight took no more than 20 min (including prep and cook time) to make.

Boil the polenta for about 5-8 minutes, set aside. While polenta is boiling wash and deseed the peppers, cut an onion (I used red onion), wash and cut a zucchini.

Note any veggies you have in your fridge that you like to sauté would work here.

While all this is going on defrost the shrimp in the sink by running cold water on top.

When ready to sauté veggies and shrimp, take out two non stick pans or skillets and put some butter and olive oil to heat up.

When hot place the shrimp in one pan and the veggies in the other.

Use your favorite spices, I used Cajun spice mixes today and salt and pepper.

Shrimp will be done quickly. Set aside. Veggies take about 10min.

Serve and enjoy!
