Cheesy Slow-Cooker Pierogies with Crispy Bacon 🥟🔥

Ingredients:

1 Box (approx. 16 oz) Potato and cheese pierogies (or similar dumplings)

1 cup Heavy cream

1/2 cup Chicken broth

4 oz Cream cheese, softened

1 1/2 cups Shredded Cheddar or Monterey Jack cheese

1/2 cup Cooked bacon, crumbled

Chopped chives or parsley (for garnish)

Instructions:

In a bowl, whisk together the heavy cream, chicken broth, and softened cream cheese until relatively smooth.

Place the pierogies into the slow cooker basin.

Pour the cream mixture evenly over the pierogies. Top with the crumbled bacon and half of the shredded cheese.

Cover and cook on LOW for 3 hours (or HIGH for 1.5 to 2 hours) until the pierogies are tender and hot.

Top with the remaining shredded cheese during the last 15 minutes of cooking to let it melt completely into a gooey layer. Garnish with chives or parsley and serve.

Ingredients
3-4 lbs pork shoulder or pork butt

4 large potatoes, peeled and cubed

1 cup beef broth or chicken broth

1/4 cup brown sugar

1 tbsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

Salt and black pepper to taste

1 tbsp cornstarch blended with 2 tbsp water (optional gravy thickener)

Instructions
Season the Pork: Mix the brown sugar, paprika, garlic powder, onion powder, cumin, salt, and pepper in a small bowl. Rub this spice blend generously all over the pork shoulder.

Fill the Slow Cooker: Place the cubed potatoes at the bottom of your slow cooker. Rest the seasoned pork shoulder directly on top of the potatoes.

Slow Cook: Pour the broth down the inside edge of the pot (don't wash the spices off the meat). Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until the pork is completely melt-in-your-mouth tender.

Shred: Remove the pork and use two forks to effortlessly pull it apart.

Thicken Sauce & Assemble: If you want a thicker gravy, stir the cornstarch slurry into the remaining cooking juices and cook on high for 10 minutes. Toss the shredded pork back into the juices with the tender potatoes and serve hot.
