"I started my keto journey on January 23rd of 2021 but was not able to get a reading on my scale until February 10th. At that point, I weighed 401 pounds, and I estimate I was probably 20 pounds heavier before that. At 38 years old, I knew a change had to be made. Since then I’ve followed a strict keto diet, not allowing myself a single cheat day to go over 23g of carbs. Fast forward to today, I am down 115 pounds on the scale and feel like a whole new person. I’ve gone from a 5XB to a 2XLT in shirts and from a size 50 waist to a size 38. I still have a long way to go, but I am the lightest I’ve been in well over a decade. The person in the before pictures is someone totally different. I went from barely being able to walk and renting scooters at amusement parks to walking around them all day, and able to ride the rides with my kids. Keto Spinach and Bacon Egg Muffins⁠ 🥓🥚
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
6 eggs
¼ cup heavy cream
½ tsp salt
½ tsp pepper
½ tsp of baking powder
1 cup cheese
1 cup bacon
2 cups fresh spinach, torn into pieces
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
Preheat oven to 350 degrees. Mix the eggs, cream, baking powder, salt, and pepper in a bowl and whisk until smooth. Stir in the cheese, cooked bacon, and spinach. Spoon into silicone muffin tins. Bake 18-20 minutes. Enjoy!
