Chicken Salad 😋
- rotisserie chicken
- 2 tablespoons chopped green onions
- 2 cups grapes, cut in half
- 1-1.5 cups mayonnaise, or to your favorite consistency 
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup chopped pecans
Buttery Pearl Onion Boil 
Chicken Poppyseed Casserole
- 1-1.5 lbs rotisserie chicken
- 1 cup sour cream (I use French onion dip)
- 1 can cream of chicken
- 1 can cream of celery
- 1 can green beans, drained (optional)
- 1.5 cups shredded cheese (optional)
- 4 sleeves ritz crackers
- 2 sticks of butter
- Bake covered for 20-35 minutes at 350°
- Remove foil covering and bake for an additional 10-15 minutes
Fajita Chicken Casserole
- 1-1.5 lbs chicken breast or thighs
- 1 cup long grain rice
- 2 cups chicken broth
- 1 can red enchilada sauce
- 1 can diced tomatoes with green chilies
- 1 onion, diced
- 2-3 teaspoons minced garlic
- 2-3 tablespoons fajita seasoning, divided
- 1.5-2 cap shredded cheese
- Bake covered for 45-55 minutes at 400°
- Remove foil covering and top with cheese and bake for an additional 10-15 minutes
Oatmeal chocolate chip cookies
Ingredients
* 1 cup all-purpose flour
* ½ teaspoon baking soda
* ¼ teaspoon baking powder
* ½ teaspoon fine sea salt
* ½ teaspoon ground cinnamon
* ½ cup salted butter (softened)
* ½ cup granulated sugar
* ½ cup light brown sugar (packed)
* 1 egg
* 1 teaspoon pure vanilla extract
* 1 ½ cup old-fashioned oatmeal
* 1 cup mix-ins (chocolate chips, raisins, cinnamon chips, etc.)
Instructions
* Preheat oven to 375 degrees
* Line two large baking sheets with silicone baking mats or parchment paper. Set aside.
* Combine the flour, baking soda, baking powder, salt and cinnamon in a small bowl. Set aside.
* Put softened butter, granulated sugar and brown sugar in the bowl of a standing mixer and beat on medium-high speed for 1 minute, or until light and fluffy.
* Add egg and vanilla and beat on medium-high speed for 1 minute.
* Add the dry ingredient mixture and beat on medium speed until combined.
* Then, beat in the oatmeal on low speed.
* Bake in preheated oven for 10-12 minutes until the top is just set and the edges are lightly browned. �
Creamy Ground Beef Orzo (One-Pot Dinner)
Ingredients
1 small yellow onion, finely chopped
1 teaspoon kosher salt, divided
1 pound ground beef
1 teaspoon no-salt added Italian seasoning
2 cloves garlic, minced
1 cup dry orzo
1 (15-ounce) can tomato sauce
2 cups low-sodium beef broth
***To Add at the End
¼ cup half-and-half
4 oz cream cheese
â…“ cup freshly grated Parmesan cheese
¼ teaspoon freshly ground black pepper
2 cups roughly chopped baby spinach (optional)
