Royyalu Mulakkada Tomato🦐🎋🍅/Shrimp with Drumstick & Tomato Curry
👉Prep Shrimp:
•Thaw, Wash, marinate with salt, turmeric, red chilli powder, a little crushed ginger garlic & oil
•Add this to a hot pan and let all water evaporate flipping all sides until the raw shrimp curls up but doesn’t dry up too much. Keep aside.
👉Heat Oil, tadka(mustard, cumin, urad dal, curry leaves), onion, green chillies, a little crushed ginger garlic, drumsticks, salt, turmeric - cook until 50% cooked.
👉Add tomatoes, red chilli powder, kashmiri red chilli powder, very little garam masala, coriander powder, adjust salt - cook until tomatoes are 50% done.
👉Add the cooked shrimp, cook with a splash of water until tomatoes turn pulpy and everything comes together leaving oil.
👉Cilantro garnish & enjoy with rice🍚
👩🏻🍳
Beerakaya Pesarapappu🥒🟡
👉Oil, tadka, garlic, green chillies, onion, beerakaya(peeled, tested for bitterness at the store & chopped), salt, turmeric - cook until 50% soft.
👉Add Tomato, red chillipowder, coriander powder, sauté for 1min until soft, add washed+10min soaked moong dal, adjust salt, sauté, add water to submerge the dal and pressure cook for 1-2 whistles.
👉Once the pressure is out, bring to a boil again to remove any boiled off smell. Cilantro garnish🌿
👩🏻🍳
Yogurt🤍
👉Boil 1qt 2% milk in a saucepan at med heat for 10mins, cool down until temp is hot enough to touch but a little over luke warm for a tight set.(takes about 15-20mins)
👉Take 2 tbsp cold yogurt(set from a previous batch or store bought is fine - I get Pavel’s Russian as back-up), whisk it smoothly, add a bit of warm milk into it, mix all into the entire milk. Sets in 4.5hrs-5hrs, place in fridge to set for another 2hrs at least. Done✅
