High-Protein Mango Cottage Cheese Smoothie 🥭🥤

SAVE this recipe if you want something for breakfast or lunch that is balanced, delicious, and will keep you full for hours 🙌

INGREDIENTS:
✔️1.5 cups Frozen Mango (can substitute 1 cup frozen blueberries for a lower glycemic option)
✔️1/2 cup Cottage Cheese
✔️2 tbsps Lemon Juice (Juice from about half a lemon)
✔️2 tbsps Unsweetened Coconut Flakes
✔️1 tbsp Ground Flax Seed (Optional)
✔️1/4 cup Vanilla Protein Powder (1-2 scoops depending on scoop size and brand)
✔️1.5 cups Unsweetened Almond Milk

These No-Bake Almond Apricot Coconut Bars are one of those staple recipes I've made for years.

In fact I first discovered them when I was pregnant with my first son and trying to stock my freezer with healthy options before he arrived!

And here we are 6 years later making them again :)

The reason I love them is that they are easy to make, delicious, and loved by the whole family.

The dried apricots add that chewy sweetness, while almonds and coconut bring healthy fats that help keep little (and big) bodies fueled.

And here’s another cool thing: Both dried apricots and almonds are rich in polyphenols, plant compounds that help calm inflammation and support a healthy gut. Those polyphenols actually feed beneficial gut bacteria, which can positively impact digestion, immune health, and even mood. ✨
