First try at crunchy Persian rice tahdeeg using only flour and water! Before you start the final steaming phase of Persian rice, instead of using flatbread, potatoes or other vegetables, simply mix 2 to 3 tablespoons of flour, 1/2 cup water, saffron water, 3 tbsp of vegetable oil and 2 tbsp softened butter with salt/pepper/turmeric (to taste) to create a paste. Spread the paste at the bottom of the pot, top with par-boiled & strained rice, then proceed with rice recipe as usual. It's quite good! It can be jazzed up with more colorful ingredients and spices!
