Thai Crying Tiger Steak with umami-bomb marinade and spicy dipping sauce called Nam Jim Jeaw.

Steak Marinade:
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp neutral oil
1⁄2 tbsp palm sugar
1⁄4 tsp ground black pepper

Nam Jim Jeaw:
1.5 tsp uncooked glutinous rice grains, to make the toasted rice powder
2 tbsp FRESH lime juice
1 tbsp fish sauce
1 tbsp tamarind paste
1 tbsp palm sugar
1 tbsp chopped cilantro
1 -2 tsp Thai chili flakes
1⁄2 small shallot, cut into wedges
