This Texas wagyu beef lollipop was certainly meat love at first sight when I discovered website.
This chuck short rib is frenched/trussed perfectly to create a delicious beef pop.
I decided to go low and slow on the with it.
Smoked over hickory and at 275 degrees to 195 internal temp.
I highly recommend you check these butchers out and buy yourself a few dozen….the rib pops are only a small part of their offerings!

Seared USDA Prime seasoned with THE RUB from
Baked tater with a half stick of butter covered in white cheddar cheese!
Oh and yes thats a salad on the side.
