Brought back a goodie and a soon to be staple for today’s cooking for friends sesh - Tortang Longanisa + Ensaymada French Toast Casserole.
I love the balance of flavors in the tortang. The garlicky sweetness from the ground longanisa, the bright heat from the atchara hot sauce and freshness from my ‘pino pico - 🤌🏽🤌🏽🤌🏽.
The ensaymada French toast casserole is like a cinnamon roll, but it’s so much more than that. If you’ve had ensaymada before, you know all about the sweet and savory goodness going on between the brioche, the buttercream and cheese: Spencer went back for thirds, so this will definitely be making a return. 🤣

After two years in hiding, my calamansi pie is making a comeback. 🥳

Haven’t had the chance to try this pie? You’re in for a treat! If you’re not familiar with calamansi, it is a citrus native to the Philippines. Flavor-wise, you can think of it like a hybrid between a lime and a tangerine. I like to say it’s similar to a kumquat, but more tart.

The tartness of the filling is balanced out with my graham cracker coconut crust and topped with a coconut whipped cream. 🤤
