This month's Madcha post is a wonderful springy treat; classic matcha ice cream!
Matcha flavor ice cream is popular in Japan and other parts of East Asia 🌏 many come in a variety of strengths of matcha. Matcha ice cream has been available in the US since the 70's, becoming most popular in the 90's.
It's been a dream of mine to travel Japan and try their green tea ice cream! For now I just have to make it myself 🙂‍↕️
I used the bag & rock salt method here. It's gets super cold so you have to be careful using your hands to mix the ice cream. I also made a yummy, fresh strawberry sauce to mix in and hot fudge sauce to top and a cute little strawberry rose for garnish.

In part of Springtime one of my best memories is visiting my great-great Aunt Hellen everyday before I started kindergarten. In the spring and summer I would walk around the block to her house in my hometown and visit as often as possible. My cousin, Sx3, would come with as well sometimes. One particular day we went over to Aunt Helen's house and we made lemon bars for my grandmother. We walked them back around the block to her and all enjoyed them together.
Since today is the last day of my vacation and I think of them often around this time (of my grandfather's passing 24yrs ago) I decided to make some from-scratch citrus bars with a simple crust. Yesterday my bestie brought me 2 gorgeous citrus fruits + 2 little ones. They don't have stickers but they seem to be some form of Sumo citrus & Cara Cara red navel oranges. They'll work just as well.
Citrus themed posts have been abundant this year so far 😋

ITS VACATION TIME BAYBEE
We L🫶🏻VE breakfast in this house & I have all the time in the world to bake from scratch this week so I decided to make a lil French toast bake and some from-scratch apple butter.

I got plenty of surplus apples and some real cinnamon sticks. You just cook it up in your crock pot with some other good stuff and let it do it's thing mostly.

For the French toast bake I used a stale-ish Publix baguette and used this overnight French toast bake recipe [linked below 🔗].
I got this Halloween Hello Kitty dish for Christmas and I just love her. Isn't she cutie? 🥰
I didn't end up loving the French toast bake because no matter how long I baked it the bottom portion was still a little runny. Maybe that's just user error.

BiggbyxBatz Big Back Cheesecake
My family are traditionally Christians/Baptist (how I was raised) but as a now Satanist I somewhat celebrate Ostara. I was happily invited to Easter this year so I had to bake something!! My family are my biggest fans after all.
~Not an official collab~ but today I made my family this savory-sweet baked cheese cake. You already know I love a good cheesecake. This is a chocolate cheesecake base with swirls of 𝑩𝒊𝒈𝒈𝒃𝒚'𝒔 [seasonal] Salted Caramel. The crust is also made of 𝑩𝒊𝒈𝒈𝒃𝒚'𝒔 glazed donut holes. For a little bit of Easter decor I added 𝑪𝒂𝒅𝒃𝒖𝒓𝒚 Mini Eggs. This one cracked because of swirling caramel into it but it tasted so good!

I had been given way too many POUNDS of carrots just in time for Easter so we gotta use these up. No waste, baby.
So secondly, I made this delicious carrot cake base layer and then a plain cheesecake layer on top. Especially because the cheese cake recipe I use usually makes 2 batches with the pans 9" round pans I have. I would have loved to add some walnuts to this for a nice crunch but my uncle can't have nuts due to diet.
BUT for decor I used some leftover cream cheese butter cream to make cute little carrots on top of each slice. Don't forget the sparkle!! 💖

It's a boss lady's birthday. I told her I'd make her whatever she wanted. She requested a cookie cake with cream cheese frosting and a dusty rose color palette. She told me to do whatever I wanted so Im hoping she loves this cookie cake. 🥹
I made your usual cookie cake, 1 layer, but going with the theme I decided to try out Cocoläat ruby chocolate chips. Very fruity & floral. Of course a classic cream cheese buttercream dyed rose gold with rose gold glitter spray, a rose gold crown because she's a queeny, edible roses and little O'Creme cherry pink edible diamonds (which are practically invisible 🫥).
I had to use white, yellow, pink and brown to get the frosting color right.

Cake reads:

My penmanship could be better but that's what schooling will be for! I had to scrape and redo it a couple times but she cute.
