Transitional cocktails starting with peaches, ending with apples, and a little bit of everything in between.
PEACHY CORN PASTA SALAD RECIPE BELOW ⬇️
Like if the end of summer had an official pasta salad… I think this would be it
1 bag of pasta, cooked and cooled
4 ears of corn, lightly roasted with some butter
2-3 peaches, chopped
1 pack of prosciutto, crisped (you could also use cooked + cooled bacon pieces, too!)
1-2 handfuls of fresh basil, chopped
1 container poppy seed dressing
Black pepper and granulated garlic, to taste
OPTIONAL: salt, but I thought the prosciutto added enough for my liking!

Sometimes I want a Bloody Mary but I don’t want THAT much tomato juice… you know? So why not have the best of both worlds? A little hair of the dog, a little tiniiiiii, and a lot good timesssssss.

SUMMER SANDWICH SERIES: peach prosciutto + burrata
Grab your favorite loaf of bread, add slices of prosciutto and peaches. Add some arugula on top and then right before serving break some burrata on top and add a drizzle of balsamic reduction. Honestly some of my best work, if I do say so myself.
