Beets, greens, and goat cheese? Sounds like summer to us! Grab some beautiful Chioggia beets (local from Maple Lawn Farm) and local greens for this week’s recipe!

RECIPE // Beet, walnut, goat cheese salad
4 medium beets · olive oil · 2 cups greens (arugula or lettuce of choice) · 1/2 shallot · 1/2 green apple · 1/4 cup walnuts · 2oz goat cheese · microgreens (optional) · balsamic vinegar · salt + pepper

Preheat oven to 400°F. Place each beet on a sheet of foil, drizzle with olive oil and season with salt and pepper. Wrap the beats and place them on a baking sheet to roast for 35-60mins (until tender). Allow beets to cool in the fridge. Once cooled, slice beets 1/4 thick rounds. Combine with greens, shallots, apples, walnuts, cheese, and microgreens in a large salad bowl. Drizzle with balsamic to your liking and season with salt & pepper. Enjoy!
