🥗 Meal prep this salad for a delicious whole-foods, low-carb side dish to enjoy all week long.

Keeping large salads or vegetable dishes prepped and ready to go all week helps me meet my nutrition goals. Who wouldn’t love having this salad ready to go?

I top the salad with seared tuna, marinated chicken breasts, or simple sauteed shrimp. And I don’t get tired of it - and it stays crisp for 3-4 days!

The dressing is what makes it! Sunflower Seed Butter has been a pantry staple of mine since I discovered it over a decade ago. I love that the ingredients are simple and clean - sunflower seeds and salt, that’s it.

Making my salad dressings at home also ensures I am getting just the things I want, and not a laundry list of additives and preservatives. Seriously - check the ingredient list of your favorite store-bought dressing and decide if it should stay or go!
